Kengan Ashura is a fantastic fighting anime that manages to avoid falling into the typical pitfalls by spending valuable time to flesh out the backstories of pretty much all of its characters. While the early-game starts as normal, our protagonist vs. Whoever seems most impressive, once the tournament arc starts and they spread the focus out among a large cast of side characters it becomes more difficult to ascertain the victor in a given fight and thus they become more interesting. Though I haven't read the Manga I have watched the two seasons currently available on Netflix and eagerly await the third.
Another good option is Rascal Does not Dream of Bunnygirl Senpai, a somewhat-romantic Monogatari style anime where the protagonist Sakuta helps out people whose high school dramas manifest as supernatural occurrences called Adolescence syndrome. It focuses on an enjoyable cast of characters with a variety of heart-warming and tear-jerking moments that'll keep one hooked to the end if they're into that sort of thing.
